It sounds to me that perhaps you are asking 3 or 4 different questions, and sort of lumping them together into one generalized question. People do what people do, and they tend to pat themselves on the back for having made changes that they have not actually made. So, it is not uncommon for people, even in the vegan world, to be obsessed with protein, and to have inaccurate assessments of how much protein is necessary for healthy development. If protein was the key to building muscle, there'd be a lot more weightlifter restaurants and a lot fewer bodybuilder gyms.
