Dr. Graham,
I have read your book and am transitioning (over the past 3.5 years) to a fully raw 80 10 10 diet.
Breakfast and lunch are a snap for me - I am working to eliminate cooked starches from dinner - will then work on losing the cooked green/yellow vegs.
I have noticed that cooked starch (rice, potatoes) seems to make me foggy and makes my left heel crack and peel... quite an unpleasant experience.
I have asked the folks about this on the McDougall forum - they seem to refuse to believe starches are harmful. I have been trying to recover my health for sometime now - and have indeed noted the negative impacts of cooked starches (non starchy vegs do not seem to bother me).
What are the reasons for the harmful effect ? Toxic compounds related to the cooking process ? Do you know if there are any studies related to this ?
