As for the percentages, here is the simplest way to do it:

"On most days, you will eat juicy fruit for breakfast, sweeter fruit for lunch, and all the acid fruit you care for before a [raw] vegetable-based dinner. It is really that simple.: The 80-10-10 Diet p. 162.

On calories, the book goes into great detail on how to calculate those, so I won't go into it here. Rule of thumb is to up the calories if over a period of time you are unintentionally losing weight or drop the calories (by maybe 250-500 per day by adding more greens and deleting a bit of fruit and adding more physical activity) if over time you are unintentionally gaining weight or wish to lose weight. Dr. Graham recommends losing no more than a pound or two per week.
