I'd say that the "irritating" substance in pineapples is the enzyme bromelain; bromelain breaks down proteins, so basically it starts destroying the proteinous structures in the mouth and any tissue that it comes in touch with until it enters the stomach and is being denatured by the stomach acid.
Possibly some of it survives the denaturation, since there are commercial supplements of concentrated bromelain.

And I think that a prolonged exposure of the teeth to the acids from i.e. citrus (i.e. when eating lots of such fruits, which takes time), is harmful to the enamel, because that's chemistry — and there is not enough metal content in these fruits to buffer.
