Just re-listened to this on Making Friends With Your Food:
"If you eat the nighshade PLANTS you will die -- do not eat the plants. But, the FRUITS of the nightshades are not toxic and in fact they're exceptionally GOOD for us -- highly, highly good for us. However, there are people with compromised digestion who will find that . . . they do not adequately break down some of the acids that are traditionally found in the nightshade[s] . . . . resulting in what we typically thik of as autoimmune responses [e.g., various forms of arthritis]. It's NOT the tomatoes CAUSING the arthritis. . . . [I]t's literally a digestive disfunction RESULTING in an arthritic demonstration by the body."
Dr. Graham goes on to say that once the digestive issue is addressed (supervised fasting on water only is one such way), the difficulty with nightshades disappears.
Hope that helps clarify things somewhat.
