Yes, children should eat more fat than the 10% suggested in the 80/10/10 diet. They start life with 50% calories from fat so going directly to <10% is not ideal. There has to be a transition.

One mistake I see however in children is allowing them to eat this higher level of fat for too long. I live in the 80/10/10 community in Hawaii and I see children eating guacamole for nearly every meal, nearly every day. Some of these children are close to 10 years old or more. I have to believe that they are getting probably over 50% of their calories from fat because avocado is about 75% fat by calories. Eat them 3 times a day and you're getting more than 50% calories from fat. It's sort of going backwards...instead of going forewards. This is just my observation. I'd suggest that children consume less than 50% of their calories from fat after weaned from breastmilk, with a goal of less than 10% by the time they are 12 to 13 years old.

Fred is eating a diet of cooked vegan foods. What would you expect him to say to other people? Eating the way I do is bad?

The problem with asking people about diet is that it is always a biased question as every living human has their own diet. Nobody is going to say I eat junk so don't do as I do but I recommend eating this way.

Even Dr. D eats the way he does and recommends it for everyone. If you have the ability to think logically the raw way makes the most sense and is the safest and most rewarding way to eat. If you are convinced that cooked is superior or are addicted to cooked foods, you'll do otherwise.

There have been experiments done on animals where a group of them have been fed small amounts of cooked foods and another group all raw foods. The results always show that the raw foods are superior every single time. Don't let someone's addiction to cooked food influence your decision.
