I HIGHLY encourage you to get a copy of The 80-10-10 Diet as soon as possible, if you don't already have it. I think your questions will be answered there.

In the meantime, read the following quotes from The 80-10-10 Diet:

"How Do I Eat That Much Fruit? As you drop the fat from your diet, you must significantly increase your daily fruit consumption, a habit that takes practice to develop. . . . One tactic to achieve more bites, and to support our caloric needs, is to start with several fruit meals a day . . . . Over time . . . you will be able to reduce this number of meals down to three and the possibly even two. Also, make a practice of eating just one or two bites more at each meal . . . . The elasticity of your stomach will promptly accommodate the extra bites, just as all your other muscles will elongate if you were to adopt a yoga practice. [T]he goal here is not to eat until you hurt but to gently encourage your digestive system to regain its flexibility. You don't have to make the transition all at once, either. . . . Eventually, you will be able to eat a satiating and calorie-sufficient meal from fruit that will hold you all the way until the next mealtime comes around." p. 157

"By eating primarily fruit, vegetables, and leafy greens, your diet is automatically close to the ideal of 80/10/10. However, you may want to use a calculator [e.g., nutridiary, cron-o-meter] to determine whether you are getting enough calories for the day to meet your basic metabolic and exercise needs. . . . Very often, people simply do not eat enough because their stomachs are used to accepting a certain volume of food each day, and raw foods are not as calorie dense as cooked foods. Therefore, to consume enough calories, you need to train your stomach to accept more food, especially fruits." p. 250

"The more you practice eating meals of just fruit, only fruit, and nothing but fruit, the easier and easier it will become to consume appropriate volumes. If your fruit meal does not "hold" you until the next meal time, at least three to five hours later, then you did not eat a sufficient quantity of food. With practice, it will get easier. Until then, feel free to add an extra fruit meal between breakfast and lunch, and again between lunch and dinner." p. 251

The book also addresses how to calculate your personal caloric needs and gives sample daily menus.

P.S. The way to know if you are sufficiently hydrated is to count how many times you pee in a 24 hour period. Ideal is 10x per 24 hour period as you can see here in on of Dr. Graham's videos on the subject:
