Hi Cassandra, Sorry I don't have an answer to this. You asked what others do if they hold down a normal job, and, for me, I bring whole fruit with me to work. I do not need to consume nearly as much as you do and I have a very short commute, so I'm sure that makes it easier than what you're dealing with. For example, I'll bring a bag with whole bananas (haven't had a problem with bruising). Or, I'll bring a tupperware full of persimmons or a whole melon or a bag of citrus. . . whatever is in season. Don't get me wrong, I consume banana smoothies from time to time, but I try to consume them within 30 minutes of making them due to the oxidization you speak of (even in a sealed container).
