There is no correct value at all.
Any parameter in foods is subject to fluctuation.
The values in these databases are average values of a few samples tested at a particular time, from a particular place and so on.
You actually cannot know what your particular food precisely holds and what not.

Anyway, it is highly unlikely that any such biological organism is void of any of the macro nutrients.

However, a totaly different question is if and to what amount a macro nutrient from one organism (i.e. food) is avalable to a particular other organism (i.e. that is eating the former). This will also depend on many factors. So it's always a matter of guessing.
