I'm with Robin in that I really prefer mono meals -- especially fruit mono meals. But, Dr. Graham has encouraged me to try one new "recipe" per month, so here I am to share the one I concocted last night.
Most of the ingredients came from my backyard garden, although the tomatoes and sweet "bell" peppers came from the grocery store (not exactly locally grown, but only one state away):
1 head organic cauliflower
A bunch of organic arugula
About 6 small campari tomatoes (certified pesticide free)
3 sweet bell peppers (1 yellow, 1 orange, and 1 red)
Juice of one organic lemon
Pulsed all of this in the Vitamix until the cauliflower resembled a chunky rice texture.
Scooped this mixture into organic asian (napa) cabbage leaves and chowed down! :)
My husband took a look and said, "That looks pretty good!" I asked if he'd like to try it and he said, "No, thanks. I'm full." (He was having a Super Bowl gathering and had already eaten pizza, potato chips and dip, chicken wings, soda, etc., etc.). A little later, he came back into the kitchen and started eating cookies! I said, "Wait a minute! I thought you said you were full?" To which he said, "Well, I haven't had this kind of cookie before and wanted to try them." So, I said, "Oh, really? Well, you haven't had this before either (motioning to my recipe)." (Smile). He laughed and said, "You're certainly observant tonight. Okay, I'll try some." So, I scooped a leaf for him and he ate it and LIKED IT! He said, "That's pretty good. Not for a whole meal, but for a side salad thing or something."

I'm really proud of my husband for trying new things. When we first met years ago, he had never eaten fresh fruit or vegetables (unless you count the lettuce and tomato on his burgers). He was raised on canned and decided he didn't like fruit and veggies (who would, eating canned stuff?). Now, he eats fresh salads from our garden. He likes fruit smoothies and he's really looking forward to planting some citrus trees soon.
