High Brix foods taste better. A Brix refractometer will tell you the Brix. The higher the Brix, the more sugar and soil minerals it will have. The farmer increases the Brix by supplying minerals to the soil such as limestone. See the link below.

Non-organic lettuce will have pesticides, which will damage the soil organisms, which produce the food for the plant, and damage the consumer. Organic is always free of GMOs, unless contaminated by GMO pollen and seeds. GMOs are limited right now to certain plants. I buy 100% organic because I don't want to indirectly fund the pesticide companies, because I don't want toxins or plants grown in toxins (less healthy) or farmers being exposed to toxins, and because I like the quality of organic produce that I buy.
