It is caledd the mayan spinach. I have eaten raw chaya 4 times
maybe (I am actually in Yucatán), I have read that it is toxic
raw, on other hand It has not an strong bitter taste and it is
quite chewy (not so soft as spinach, but quite crusty if
fresh). It is quite filling and 200 gr are quite a bit, I have
seen some nutritional tables and it seems to have many protein
(7-8 gr/100 gr. Maybe it is filling for that.

So is chaya edible raw, at least in some amounts (because I
understand that all leaves have more or less alcaloids in
them)? Can I trust in the data I already have now (their taste
and the fact that it have not done any harm I have noticed)?
In the long term?

Thanks very much.
