I did my best to explain food combining in my High Energy Diet Nutrition Guide, which I am currently redesigning. If you want hard and fast rules, you're going to be disappointed, because not only are the guidelines somewhat flexible, based on the health and vitality of the individual, they are also vague around the edges, because foods often fall into more than one category. Consider the apple, for example. There are apples that fall into the acid fruit category, some fall into sub-acid, and some that could be considered as sweet. Typically, I prefer to mix fruits by water content, for the most part, which is an entirely different approach than classic food combining utilizes. I teach this approach at my Culinary Skills Week.
