Here are my notes and some comments:

went raw in 2003 and have been eating 2 avocados/day since then = too high in fat -- I have not eaten any overt fats since the beginning of 2011, just over a year ago. Page 166 of The 80/10/10 Diet book has a section called "How Much Overt Fat?" in Chapter 11, "80/10/10 in Practice". It's says that you can eat 1/3 of a medium-sized avocado. That is much less than 2 avocados per day. So, you started 80/10/10rv after being on a high-fat diet. You probably need let your body release all that fat.

doing 811 religiously since November = good -- Give it time now that you've changed the conditions inside your body.

not enough water during the water fast, ended at the end of August 2011, exercising too quickly after the fast -- The water fast is long past, so I don't think that is affecting you now.

difficult breathing almost every night

shivering from inside and couldn't breathe

running, suddenly couldn't breathe anymore, felt like throat was locked

sinusitis = Inflammation of the sinuses or a sinus, especially in the nasal region.

feeling tired on a daily basis

varicose veins

a single mom with two kids

lost my mother back in 2007, but that still feels very fresh -- I also lost my mother in 2007. I'm over it. I know why she died: medication and the standard American diet. I didn't know about the power of raw foods until the middle of 2010. I would have tried to convince her to eat 80/10/10rv if I had known about Doug Graham.

Maybe you have allergies, such as allergic asthma, and that causes difficult breathing. Here's an article about allergies by a former student of Doug Graham, 811rv Andrew Perlot:

Try cutting down on the dates or eliminating them because maybe you have a reaction to them. I get reactions from eating to much sugar, pimples and nasal mucus, so everything good in moderation, none of anything bad. Change the fruit to see what happens. Try bananas.

I would drop the sweet potatoes because we don't eat tubers. This article, http://www.raw-food-health.net/listofvegetables.html, says:

"Potatoes contain toxic compounds called glycoalkaloids, of which the most common are solanine and chaconine. This poison, when not lessened through cooking and peeling, can cause headaches, diarrhea, and cramps; it's meant to drive away predators, like yourself."

Try getting more rest. It sounds like you are pushing yourself to the limit. You may have stress from being a single mother of two children and from the loss of your mother. You are excising a lot.

Watch this video entitled "Carl Honore praises slowness":

There is a group of people who think that the fast-paced world is unhealthy and want to live slower lives. I suggest that you slow down also so that you can feel more rested and less pressure.
