Hello Ian and thank-you for your email. The white substance is an organically approved wax that helps preserve freshness during shipment. Sometimes it feels a little sticky. Simply wash it off with mild soap and water.

The ones I have now are not organic but they have the exact same substance on them.

So Just Me, if you try to avoid all wax and other coatings you'll be left with few choices. These ones are directly from a farmer in Socal and they are coated with wax also. Grow them yourself or expect some kind of preservative.
