The constant exposure to fruit acids (even with ripe fruit) is likely to cause problems, not only in the mouth. Also, enzymes like bromelain from pineapples break down proteins ("digest" your mouth).

Another possibility: insufficient amounts of essential fatty acids, namely linoleic acid. Note: the skin's ability to hold moisture is dependent on sufficient amounts of specifically linoleic acid. With the mucosal tissue likely being the first to suffer.

Also, vitamin c may help with problems with the gums.

So, eat more of alkaline greens, and less of acidic fruits.
