So far, the info I have gathered from reputable dental sources says
that cavities take years to develop, not days or weeks or even months.

Dried fruits are tough on the teeth, for certain, as is any food that
sticks to the teeth. Did you transition to 811, or go straight on to it
and never look back? I find a lot of people have trouble during the
transition phase. Seems the sugar and the cooked food don't go well
together.

As for protein levels, we need numbers. Were you within range, or out
of the WNL recommendations? Do you have any symptoms? What did
the doctor suggest? What symptoms did she say to watch for?
