Context of life is important to diet. The one meal a day is perfectly suited to the contemplative life. Wake up meditate. When the fullness of the energies rises with the sun around noon, have your meal. Then let the digestion flow. By evening when the sun is setting, so too is your digestion. Do not disturb you system with another meal that will unsettle the evenings meditations and the nights dreams. The spiritual beings you mentioned where advocating the one meal a day for contemplatives-- those who sit in the silence of the eternal. When Jesus was on the road with his apostles he ate accordingly-- more often due to physical exertion. I am on retreat now and find grazing between 12-3 ideal, with some tea in the evenings and lemon water in the morning. I definitely feel the difference if I eat at night- -I get tired and miss the opportunities to go deeper. The energy gets used up by digestion-- it takes a lot of energy to digest food.
