Interesting I would like to know also. I did notice as the jackfruit dries out the latex starts to kind of dry up. Like when I eat half and save half for the next day. Maybe that is what is happening with the slits letting air in.

37 lbs...Wow I'm jealous! Are you in FL? How much is jackfruit per lb.?
