Subject:         Jackfruit Ripening

A very nice Jamaican lady takes care of my grandmother. She told me that she remembers seeing as a child people making shallow X slits in the jackfruit to allow the gooey latex sap to seep out and cause it to ripen faster. Has anyone experimented with this? I would guess that artificially speeding up the ripening process would kill some of the quality in flavor, similar to when bananas are gassed. But, hey, maybe I'm wrong and it works. I'm short of ripe fruit though I have a TON of unripe fruit and need to ripen up some keitt mangoes and a 37lb jackfruit. Any tips? I hope I have something to eat for my first meal tomorrow after strength training.
