Thoughts, to take or leave:
1. I don't know whether your list reflects the order in which you
eat, but you might experiment with consolidation: that is to say,
eating the bananas all in one meal, and keeping the cooked foods
as far away from the bananas as possible. The approach of eating
nothing but fruit during the day, and then eating your cooked
foods for dinner, works extremely well for many people.
Beyond the question of digestion, this approach has the benefit of
making it easy and natural to increase the amount of fruit you eat
over time. Without really even trying, you may find your fruit lunch
getting bigger and bigger and your cooked dinner smaller and
smaller. But if you go back and forth throughout the day between
the bananas and soy milk and hummus, this is far more difficult.
2. Please do bear in mind that the diet you list gets a high
percentage of its calories from fat. Not only is this fat problematic
from an overall health perspective, it also makes it difficult to eat
more fruit -- if this is a goal of yours -- because when there is
too much fat in your system, eating more fruit is likely to make you
feel funny.
If you decide that you want to transition from fat calories to fruit
calories, and don't want to go cold turkey, I would stress again that
the above approach can work well.
