Not sure what the white stuff is, sounds odd. They are ripe when the outside is yellowish brown and the is a very strong aroma; you'll know, can't miss it. You should be able to easily stick your hand in and pull out delicious chunks, then you'll know it's ready to eat. This video I made may help give you an idea.
