I'm ~ 99% vegan, don't get me wrong; I am by no means suggesting eating meat would be a positive thing and my 19 year son and my 17 year old daughter never have, and it's been ~ 25 years for me.
But the supposed cholesterol/heart disease correlation is crazy. I'd eat a burger before I'd take a statin drug (actually, no way would I do either).
I eat mostly raw, but I'll tell you one thing for sure - if I were to cook something (which I rarely do), I would definitely cook 'it' in butter before a vegetable oil. Vegetable oils are good for you and animal fats are bad for you - BUT - if you're cooking them (never a good idea) butter does not become as toxic as vegetable oils do when they are heated.
Bottom line - raw. But if you are going to cook, butter over vegetable oils.
But just eat raw fruits, vegetables, and nuts and it's not an issue.
I believe that healthy fats are CRITICAL; I eat avocado, olives, and raw unsalted nuts regularly.
And I've read everything from Barnard, Sinatra, Esselstyn, Colin Campbell, you name it. I'm convinced that sugar is the deadliest thing you can consume; fat is harmless (actually helpful).
Read the book WHEAT BELLY and let me know what you think after that. I would say that after going vegetarian eliminating wheat is the 2nd best health choice I've ever made.
