While Cutco is most likely a decent choice for your average home cook, they are not a top quality blade and will not hold up to professional use, despite their near-premium prices. I've broken 2 Cutco chef knives and one serrated bread knife in the past 3 years. All the knives broke on the tang about mid handle. One of the chef's knives broke just forward of the second rivet allowing the blade to rotate on my down stroke cutting my middle and ring fingers at the first knuckle, sending me for a quick vacation to the ER. I've used Wustof Classics, Henckels 4 stars, numerous Dexter Russels, F. Dick, and low end stamped Henckels and never had a blade break the the Cutcos did. Broken tips, sure, but never catastrophic failure.
