Sure, it might hold an edge well, but good luck ever getting it sharp again once it dulls. The harder the steel, the harder it is to give the knife a good edge again.
Or better yet, enjoy your $4000 set of industrial ceramic knives, and show the world how much you are like a cave man by eating with rocks. lol
440A is not a very basic steel. It's like driving a corvette. Sure, you could pay ten times as much for the ferrari, but god help you if the ferrari breaks down.
