Well pal, that's because half of the industry has moved well past there. You're using powdered steels that can better support steep grind angles (steeper than Cutco would ever dream of). You're seeing steels like VG-10 in mainstream lines. You're seeing Rockwell hardness going into the mid-60s on even consumer grade knives. 55-57 isn't "hard" anymore. Anyone choosing to stay at 55 or so wants ease of re-sharpening.
If Cutco was serious about all this handy infinite edge retention, they would upgrade the steel to something modern. Unfortunately that would make their very, very cheap knives cost more to make, and we couldn't have that, could we? LOL ...
Your Cutco steel is being left behind, just like those cheesy "museum piece" 1950s handles ... one more reason people serious about knives laugh very, very hard at the shill antics that come out every time these cheap products are mentioned.
