Pressure cooking has actually been shown to lose less vitamins than conventional cooking. Steaming is best, as it loses the least amount of vitamins. Next comes pressure cooking (about 30% loss), followed by conventional cooking (about 50% loss), and dead last, we have microwave cooking (more than 70% loss).
