I also started with just a simple, discount store product that was stainless steel and on closeout. But it was enough to make me realize this "appliance" had some definite advantages. I found a bigger, heavier, modern jiggle top one at a thrift store and am saving for a top of the line non-jiggle top one.
First, your pressure cooker should come with at the least a pamphlet with some directions/cooking instructions.
Second, check out some pressure cooker cookbooks at the library to get a feel for how things work.
Third, a great book for cooking in a pc as a vegetarian is by Lorna Sass. GREAT VEGETARIAN COOKING UNDER PRESSURE. She has some other books out on pressure cooking - some are meat some are not. There are probably other books out there, search various websites that carry cookbooks.
If your library doesn't have the book you want, you can ask them to order it for you through Inter-Library Loan. You might have to pay the postage (minimal) to return the book, but it's a great way to check out a pricey book without spending the money.
I started with her book from the library and liked it so much I bought it and two other books she wrote. I am now a happy pc cooker.
Fourth, even if all you cook at first are beans and rice you have made your life easier.
Anyway, once you get a feel for how things work, you can begin to adjust the cooking method of your favorite recipes. (find a similar recipe and go from there)
Sorry it took so long to get back to you, and that no one else had an answer for you. We obviously use the pc just to keep our heads above water in our crazy lives, but life is good.
