About pressure cooking; using 2 3/5 cups of water will not be sufficient for 2 cups of rice. This should be for normal cooking (by the way of simmering etc). The amount of water used also depends on the type of rice used. But, for pressure cooking you should use about 4 cups of water for 2 cups of rice. However, it is better to use pressure cookers for beans, potatoes, vegetables, meat, chicken etc.
