Amongst its other uses, the steaming basket can also be used for juicing under pressure. To do this you will need a relatively tall pressure cooker (6L or more). The results are awesome. Place a solid inner pot in a water bath or on a tripod. Place the steaming basket above it. Fill with a fruit or vegetable such as chopped rhubarb with good sprinkling of sugar. Cook away on level 2 for about 20 minutes. Allow the pot to cool naturally. When you open the pot, remove carefully both inserts. The lower one will have collected a thick, rich, cooked vegetable/fruit juice.
