Hi, I would like to take the 'Killer Black Beans' recipe from the Health Promoting Cookbook, and convert it into a PC recipe. So far, the techniques I plan to use are to add all ingredients at the beginning, with the exception of the acid ingredients (tomatoes and tomato paste), and to reduce the amount of liquid from 4 cups to 3 cups. The question is, if the original recipe calls for 2 1/2 cup water and 1 1/2 cups celery juice, should I just cut the water down to 1 1/2 cups and leave the celery juice as is, or should I cut the amounts of both the water and the celery juice proportionally to get a total of 3 cups liquid? What do you think? That is my dilemma. The only other change I'm making to the recipe is that I'm going to substitute eggplant for the mushrooms, because I just don't like mushrooms.
