I cook for myself alot too and it's a pain to see leftovers hanging around all the time. The best solution is to cook dinner with enough left over for lunch the next day. That way you don't need to cook lunch on a working day and can still eat a home cooked meal.

As for using a pressure cooker: it's fabulous when you're in a hurry or when you're cooking rice (mixed with veggies and/or beans) or lentils. However, for veggies alone (apart from potatoes, which one might like 'soft') the pressure cooker usually over cooks them. So I don't suggest you use it for vegetables. Perfect for quick rice (and other grains I suppose) and absoletely essential for dals (lentils.
