I really like Lorna Sass's writing style. I had to back order her vegetarian book but did spring for one of her general pressure-cooking books. Very concise style with attention to detail. (Love affair for an engineer.)

My bean problem with pressure cooking is I try to do it in two steps and not three. Pre-soaking is the first step (I've always done that.) Then you cook the beans w/basic flavoring (my fear of excess water); drain & reserve liquid, then you final cook the beans with all the trimmings, veggies. etc. Water minimized. My bean problem has been fixed.

Red beans and New Oleans fixings were excellent last night.
