Subject: you don't have to soak overnight if you quick soak

Yesterday Jeff and I wanted potatoes for lunch, so I chopped up an onion, added a BUNCH of chopped garlic, sauteed in water, and then threw in two pounds of unpeeled cubed baby reds (and 1 cup water). Just to be different, I added a couple of tsp of curry. Cooked this for 4 minutes under pressure, and the potatoes were so creamy I barely had to mash them. Sometimes I cook them in veg broth, for a different flavor.

I cooked the potatoes in my 4 qt, and steamed broccoli in my 2 qt for about 1 minute (the little PC is great for roasting potatoes or steaming veggies). I then made "potato burritos," which consist of this:

1 very large whole wheat tortilla (restaurant size)
mashed potatoes
broccoli
chopped roma tomatoes
couple of big leaves of romaine hearts
guacamole
lots of fresh salsa

roll it up, and eat!

Jeff liked this so much for lunch, he wanted it for dinner too.
