For McDougallers, you can make the risotto without oil and it still comes out great and creamy. Saute the onions/garlic in a little wine, stock or even hot water (deglazing as necessary with same), then add your rice and proceed on.

Because, "The Fat we Eat is the Fat we Wear", right?
