On the beans side, I would suggest getting a "fresh batch" of beans and cook all from that batch, both ways (a controlled study, so to speak!). I know that I have several jars of beans, of varying ages and some have old/new mixed together. Older beans definitely take longer to cook than freshly purchased ones. If they are really old they will NEVER get done. Also, you do know NOT to add salt when cooking, right? That will make them tough.

I also add a minute or 2 to beans depending on which PC I am using. It does take a little trial and error, though. I'd rather have them underdone and let them simmer a bit than mushy.
