I have used pressure cookers for decades. I checked some instructions with the first one I bought and never used a recipe since. You kinda just go by intuition after a while. I think that I just wait until the pressure is up and let it cook for about 10 minutes and let the pressure go down on it's own. But honestly, when I do have a mistake, it is with rice. Every once in a while I will either burn it (if I am making a stew or something) or not cook it quite enough. I should buy a timer I guess. Last night my daughter's boyfriend said he wanted to cook dinner. He cooked artichokes and I told him how to do it and about how long to cook them. After a certain amount of time, without thinking, from the other room I asked him if the time was up for the 'chokes, and he said, exactly!
