Some things just need it, and that style of curry is one of them. I bet if you make it again, with the coconut milk, you'll be pleasantly surprised (and yes, the low-fat kind works just great!). Serve it with a good mango chutney (I like Patak), steamed brown rice and chapaties or whole wheat flour tortillas...YUM!
