I have not used Peruano beans but have used Enola beans which I think
are the same. I bought them fresh last summer at a farmer's market. They are about the size of Great Northern Beans so I used the timing from Lorna Sass' book for Great Northern Beans. They were very creamy and had a somewhat pronounced flavor. I made the Pinto Bean soup from her book and liked it very much. I suppose that you could use them in any recipe calling for a medium size bean.
