Have mentioned this several times since this board's inception. Using an insert inside of a PC on the usually supplied tripod totally eliminates scorching. The indirect heat also allows much more control of how much liquid is used in cooking. For example I formerly used extra water when cooking rice to avoid scorching. This worked ok but the rice was always mushy because of the extra water. Since using a double boiler insert I use much less water. Rice comes out much lighter and is never mushy. There are a couple of downsides that I can think of to double boiler cooking in a pc. One is that another kitchen utensil is necessary. Another is that it takes a little longer to cook using the indirect heat. To me the small extra effort is well worth it.
