Okay. Well, I brought my water up to high pressure. Did the "knife test" and the gasket seems fine, no apparent leaks. I checked all around the top stuff with the knife, too, just to see what I saw. There was one spot that MIGHT have a bit of steam escaping, it was right where the handle meets the lid and the lid locks. I couldn't be sure, though. So, I got the plastic bag. But during all this time, I forgot to turn the heat down. So, right as I was putting the bag on, steam started blowing out of the safety valve! So, I turned down the heat until the hissing stopped, then I moved the pot to a cool burner. It took MUCH longer for the pressure to release than it usually does! It usually goes down in 2-3 minutes, this time it took about 10 minutes or so. I am hoping that the problem is that I am not bringing it up to high pressure. I am going to cook some beans today and test this theory. Thanks so much for all of your help and time!!
