To second Sabrina's comment I use barley as an alternative to brown rice. My suggestion is wherever you would have used brown rice try it with barley and if you don't like it don't do that again. You get a different flavor and texture with barley. Personally I attempt to always soak grains such as barley or brown rice at least 30 minutes before cooking to insure that the grains cook through. After soaking you might rinse the grains especially barley, again try it and see if you like it. If I know that I want a grain for dinner I will soak it all day. I intend on experimenting to see if this cuts down cooking time, I think it should. You might do a google search for barley recipes and see what you get, it seems to me that most of the recipes you get are not vegetarian. You will also find some recipes at International Vegetarian website with address www.ivu.org Click on recipes, then do a search for barley.
