Recently SOMEONE (I'm not naming names!!!!!) put barley into my brown rice cannister. In a hurry a couple of weeks ago, I didn't notice I was cooking barley instead of brown rice, until I opened the pot after it was done. Here's what I cooked 3 cups barley bring to boil before putting top on - once boiling, secure the lid, bring to high pressure, and cook for 25 minutes. We were planning to have chili and rice for dinner, but as there was no rice, we decided to see eat the barley instead. It was delicious!!!! The barley was good cold on top of salad, and tasted great with dal, and anything else we normally serve with rice. This recipe made a LOT of barley, though. I wouldn't cook this much next time.
