Since many of the people here are McDougallers or E2Lers, telling them to add oil to their cooking is really very inappropriate.

I cook beans without oil all the time. It's just a matter of not trying to cook too many at once. But don't go by my experience. Go by what the manufacturer says and you are wrong about what the manufacturer says. Kuhn Rikon sends an instruction book and a recipe book with their pcs. In the recipe book, which has a rather extensive writeup on cooking beans, it says you can, (not should) use oil and kombu is offered as a good alternative way to reduce foaming. Their "General Guidelines to Preparing Beans" includes 4 steps, none of which involve oil.

I realize you probably want to promote your own little web site where you feature recipes for disgusting things like pigs feet and tripe soup, but so far I'm not impressed with your expertise.
