I HATED chickpeas until I had them cooked in a pc. I couldn't stand the mealy, grainy texture. But in the pc, you can make them so creamy textured, they are heavenly. The longer you cook them, the creamier they get, but they still hold their shape.

You can presoak them overnight and then cook them in the pressure cooker for about 9-14 minutes if you're using natural release (letting the pressure come down by itself) or for about 13-18 minutes if you're using quick release. (The longer you cook them, the creamier they get)

If you have a craving for hummus or chickpeas Italiano and didn't soak the beans, you can speedsoak them in the pressure cooker. Just put the beans in the pc with 3 cups of water for the first cup of chickpeas and 2 additional cups of water for each additional cup of chickpeas. Bring to high pressure and let it cook there for about 3 or 4 minutes. Let the pressure come down naturally and drain and rinse the chickpeas and they're ready to go!
