was just fabulous! I didn't have fennel so used fennel seed, about 1 1/2 teaspoons, and also added some portabella mushrooms and celery. My husband loves barley, and he thought it was one of the best things we've had lately. My son (not the Meat Eater, he ate leftover spaghetti, the one who actually tries new things and loves vegetables) kept moaning while he was eating, and I asked him what was wrong. He said "Nothing, mom, I LOVE this stuff!" He is 8 years old. So, three of us ate from this recipe, and I only have one serving left. IT's going in my husband's lunch tomorrow or the next day. Guess I'll be making this again soon! Thanks!
