....are fantastic!! And they are soooooo easy!! Cut 1.5 pounds of red skinned potatoes into 1/2 inch pieces and peel one small head of garlic. Bring 1 cup of vegetable stock, salt to taste, and 1 bay leaf to a boil in the PC. Once boiling, add the potatoes and garlic and bring to high pressure for 3 minutes. Fast release the pressure, drain off excess liquid and mash with a fork or a ricer. I modified the directions by throwing it all into my stand mixer and whipped the mixture into a light puree with small chunks scattered throughout. It all may have taken me 15 minutes, I'm not sure, but it was very fast. And the flavor was awesome!!! Jim
