Herb scented Lima bean soup (you will NOT believe what a creamy, rich texture this has and my lima-bean-hating husband LOVES it)

(Our local supermarket out here in the sticks doesn't carry a wide variety of mushrooms, so we make it with fresh buttons and fresh portabellos and it comes out fine)

Also, I make double batches of the Brown Rice Pudding with Apples. This is more like a hot breakfast food than a dessert and my husband takes it to work with him every morning. I sub wheat berries for about half the brown rice and it's very good. Use a relatively tart apple for this because it's a sweet recipe.
