I must admit, I have not made mashed potatoes that often. I love them, but never make them. I have a potato ricer that I use. I PC the potatoes, rice them into a bowl, and then I blend them with my stand mixer.

My GF and I cannot agree on what is "mashed potatoes". She is Peruvian and they like mashed potatoes at the consistency of cream of wheat. very smooth and loose with no gravy. I like mashed potatoes that are thicker and with more of a chunky texture and gravy dumped on top. She hates mine, but I can deal with hers, so she always makes the taters.

I am making Mushroom Barley soup Friday night for some friends that are coming over for dinner. Natalia has convinced them that this soup is the best they will ever eat. It is so easy and so quick, it is amazing.
