Subject: simple and easy potato soup

Potato Soup

6 potatoes, diced
2 onions, chopped
4 ribs celery, sliced
1 1/2 tsp salt
1/4 tsp white pepper
3 cups water

3 tbsp flour
1 1/2 cups plain soymilk (or additional water)
3 tbsp. margarine (optional)

Place potato, onion, celery, salt, pepper, and water in the cooker. Cook 5 minutes under
high pressure. Allow the pressure to come down of its own accord. Moisten flour with
part of soymilk and beat until smooth, then stir in the remaining soymilk. Stir mixture
and opt. margarine in to soup and simmer uncovered to thicken.
